I want to select the variable s_Password as a binding to the value but i cant select it. Is there anything i need to concider besides declaring the variable?

Yes, you have to enable them in OPCUA configuration file as well.
Sorry if it may sound like a stupid question but where do i find the OPCUA configuration file?
There is no stupid question, if you do not ask two times the same one 
Configuratin → connectivity-> opcUA → *.uad file
