Is it possible to deactivate the STP,RSTP,MSTP protocol of the switch 0ACST052.1.
If yes, how does that work?

I have never done that in the past, I can only recommend our User’s Manual: TSN Switch User’s Manual | B&R Industrial Automation, in particular the paragraph 6.5.1 Multiple Spanning Tree Protocol (MSTP): “For detailed information about MSTP, see the IEEE 802.1Q standard. Configuration of the MSTP stack or status queries can be carried out via NETCONF. For the configuration parameters and status values, see the corresponding YANG model”.
