I have a single OpcUA server that I use to communicate with another PC. Now I am developing a mappView visualization and I do not want to use the same OpcUA server, but have the possibility to have an additional OpcUA server only for mappView communication. Does the B&R Automation studio offer such functionality? Is there a way to separate the main OpcUA server from the OpcUA server for mappView?

AFAIK, you can have only one OPC UA server. However, you can manage access to variables in an OPC UA server with DefaultRolePermissions or set authorization node by node.
As far as I know, B&R does not currently provide an intended way to solve this problem.
Perhaps more customers should request this feature through their local B&R office to help move it higher up the priority list in Eggelsberg.
